Rice, Efo Riro and Plantains

Today's recipe is a classic naija dish and it never fails! The Rice, Efo Riro and Plantain combination is one of my favourite. You can never go wrong with this!! Recipe for Efo Riro coming up. I have to mention that this recipe is how I make it, I hear that this is not the "proper" way to make it,  but it works for me :)


Ingredients

  • Chopped Vegetable of your choice (I used tete and ugwu but I hear for authentic Efo Riro, you are supposed to use Shoko)
  • Blended Tatase, Onions, Ata Rodo, Tomatoes (the pepper mix should not be too smooth)
  • Palm Oil
  • Dried Cat Fish
  • Cooked Assorted Meat: Beef, Goat Meat, Cow Leg, Shaki, Pomo, Chicken or any other meat of your choice (cut in small chunks)
  • Five Tablespoons of Palm Oil
  • Iru aka Locust Bean
  • Maggi Cube
  • Salt


Directions
1. Heat up the Palm Oil
2. Pour in the blended pepper and let fry for 10 minutes


3. Add the Iru 
4. Let the pepper fry for another 10 - 15 minutes
5. Whilst the pepper is frying, clean your fish and tear it into chunks
6. Add the dried fish and cooked assorted meat into the pepper


7. Wash your vegetable by pouring it into boiling hot water then scooping it out and squeezing out all the water. Repeat at least once



8. Add your washed vegetables to the pepper and mix






9. Turn down the cooker and let everything steam for another 10 minutes
10. Fini
